The carob has been cultivated in the Mediterranean basin for over 4,000 years and is historically associated with health-enhancing and digestive properties. The naturally sweet, almost honey-like carob is rich in essential minerals and salts and is inherently free from addictive or allergenic stimulants. In a nutshell, the carob soothes both our stomach and taste-buds with no undesirable side-effects.

In 1998, with the help of a leading food technology firm, Terrae Reditus set out to develop a unique, gastronomically satisfying, digestive liqueur which both “tastes good (like a traditional liqueur) and does you good (like a Mediterranean digestivo)!” To be gastronomically satisfying, we required the digestive liqueur to be neither too bitter, nor too astringent, nor too sweet, nor too alcoholic.

Mediterranean civilizations have traditionally recognized the carob’s nectarean character and digestive attributes. Our major challenge was how to fill-out and round-off the taste of the carob in the mouth whilst also satisfying our gastronomic aims. It took six resourceful years and a series of sample-trials. Finally, by early 2004, we had successfully blended the carob with various typically Mediterranean fruits and herbal flavours to create an all-natural, well-rounded, moderately alcoholic and pleasant-tasting digestive liqueur.
